Gruyère AOP wheels weigh 25 to 40 kg. The dough has a thin surface and is slightly moist. It is soft, moderately firm and not very crumbly, of an ivory and solid color which varies according to the seasons. The taste of Gruyère AOP is distinguished by a more or less salty note; the fruity flavors that dominate vary according to the terroirs and the length of ripening.
